Foodie Friday!

This week’s recipe is adapted from my Aunt Lila, who lives in Tucson and I look forward to visiting every year!  I’ll be making my trip to visit in December, when I run the Tucson marathon, for the 2nd time 🙂  Here she is cheering me on in 2011!

Being gluten free, one cuisine I really miss is chinese food!  This recipe can be made GF extremely easily, which, makes me a happy girl 🙂

Chow Mein

Ingredients:

1 lb ground beef

1 leek (diced)

10 medium size baby bella mushrooms, sliced

small bunch asparagus, sliced into bite size pieces

1/2 cup soy sauce or Liquid Aminos

1 can water chestnuts

2 1/2 Tsp corn or potato starch

1/4 cup water

red pepper flakes, to taste

Brown rice, cooked

Directions:

Soften leek in olive oil and remove from pan.  Brown ground beef in same pan and season with red pepper flakes and return leeks back to pan.

meat and leeksAdd mushroom, and asparagus to pan once meat is cooked. Stir in soy sauce or Liquid Aminos.  Add water chestnuts.

all ingredientsThicken with corn or potato starch and water.  Cover and let simmer until sauce thickens.  Serve over brown rice.

Voila!  Simple meal that beats chinese takeout hands down! AND it’s good for carb loading!
