Foodie Friday!

Wasabi Ginger Salmon!  This week I was craving something fresh and spicy.  I took inventory of what I had on hand AND what is growing in my garden (!):

Fresh Basil

And, of course, quinoa- as I mentioned, I’m kind of in love with quinoa salads this summer :). The result? Wasabi Ginger Salmon!

Salmon:

1 tablespoon ginger  powder

2 garlic cloves, minced

1 1/2 teaspoons olive oil

Mix the above ingredients and brush on salmon. Let salmon marinade for a few hours or overnight.  We grilled the salmon and it was amazing :).

Quinoa Salad:

1 cup cooked quinoa (I cooked the quinoa in chicken broth)

1/2 cup steamed and cooled edamame,

1 jalapeno pepper, chopped

1 green pepper, chopped

1/2- 1 cup sliced mushrooms (depending on your taste, I used a wide variety of types)

handful of fresh basil, chopped

handful of whole raw almonds, toasted and chopped

Wasabi Sauce:

5 1/2 tablespoons soy sauce

5 1/2 tablespoons rice vinegar

1 1/2 tablespoons lime juice

1 1/2 tablespoons fish sauce

1 1/2 teaspoons sesame oil

1  teaspoons sugar

3 teaspoons wasabi paste

Mix together the quinoa, edamame, jalapeno, green pepper, and mushrooms.  Chill.  Mix together ingredients for the sauce (I used a blender to really mix in the wasabi paste).  Pour half of the sauce over the quinoa salad and mix in.  To serve, finish the salad with basil, top with toasted chopped almonds, and add more sauce on top of the salad and salmon.  MMM…. it was perfect for a hot summer night!
